Chocolate & Bacon Cupcakes


1 ¾ Cups of Flour

2 Cups Caster Sugar

1 Cup Cocoa Powder

1 ½ tsp Baking Soda

1 ½ tsp Baking Powder

1 tsp Salt

2 Eggs

1 Cup Full Fat Milk

½ Cup Oil

2 tsp Vanilla Essence

1 cup Boiling Water

450g Bacon

Desired flavour of prepared frosting

1. Preheat you Louisiana Grill to 120°C. Once your grill is preheated, place bacon strips on the grates. Smoke for 1hr-1 ½ hrs. or until desired crispiness is achieved. Set aside. Increase set temperature to 180° C and preheat.

2. Combine the flour, sugar, cocoa, baking soda, baking powder and salt. In another bowl, mix the eggs, milk, oil and vanilla. Add the wet ingredients to the dry. Slowly add in the boiling water. Mix until combined. Line cupcake tins with paper liners. Once incorporated, pour into prepared cupcake tray.

3. Bake in your preheated 180° C Louisiana Grill for 20-25 minutes. Cool on wire rack. Once fully cooled, frost with your favourite flavour of icing. Top with a strip or half a strip of bacon.
